Chicken Tostadas

Ingredients

1/4 pound gf chorizo sausage, chopped
1 onion, thinly sliced
2 teaspoons gf chipotle sauce
1-1/2 cups shredded cooked chicken
8 ounces tomato sauce
Salt and pepper to taste

6 tostada tortillas
2 cups lettuce, shredded
3/4 cup tomato, chopped
1 ripe avocado, chopped
1/2 cup gf sour cream
1/2 cup gf salsa
1/4 cup fresh cilantro, minced
1 cup monterey jack cheese, shredded
Directions
In a 10 inch skillet, cook sausage, onion and 3 tablespoons water over medium-high heat. Cover and cook for 5 minutes; stirring occasionally. Uncover and increase heat to high and cook until onion begins to brown, about 3 minutes. Add gf chipotle sauce, chicken and tomato sauce. Stir to combine. Simmer over medium heat, about 2 minutes. Season to taste with salt and pepper.

To assemble tostadas, top each tostada with lettuce, chicken mixture, tomato, avocado, sour cream, salsa, cilantro and cheese.

Tips
Leftover cooked or roasted chicken works great for this quick, delicious meal.

You can purchase flat, fried corn tortillas (tostadas) in most grocery stores. If unavailable you can fry your own corn tortillas in 1/4 inch of vegetable oil until crisp.
