4 Tablespoons scallions or red onion, chopped 2 Tablespoons red bell pepper, chopped 4 teaspoons cilantro, chopped 4 eggs, beaten Salt and pepper 2 large gf corn tortillas 2 Tablespoons gf cream cheese Gf salsa 1 Tablespoon vegetable oil
Heat oil in large skillet. Add onions and bell pepper and saute until onions are translucent. Add eggs, cilantro and a dash of salt and pepper. Cook and stir, until egg mixture is solid and almost dry. Place tortillas individually in a dry skillet over high heat. Tortillas are done when brown spots appear. Spread cream cheese on tortilla, top with egg mixture and salsa. Fold burritos and serve.
Breakfast burritos can be made with whatever you have on hand. Try potatoes, rice or gf sausage.
