4 corn tortillas 1 cup cheddar cheese, shredded 1 small can jalapenos
Preheat oven to 200 degrees F. Heat tortillas one at a time in a dry cast iron skillet, over very hot heat. Turn tortilla when it begins to brown. Sprinkle tortilla with 1/4 cup cheese and 1 teaspoon jalapenos. When cheese melts, remove from skillet, fold in half and keep warm in oven until all quesadillas are done.
