1/2 pound ground beef 3/4 cup onion, finely chopped 1/2 cup gf breadcrumbs 1/4 cup fresh parsley, minced 1/2 teaspoon salt Dash of freshly ground black pepper 2 garlic cloves, minced 1 large egg 1/2 cup dry white wine 1/2 cup chives, minced 1/2 cup heavy cream 1/4 cup Parmesan cheese, grated 2 Tablespoons water 5 cups hot, cooked gf fettuccine
Combine ground beef, onion, breadcrumbs, parsley, salt, pepper, garlic and egg in a medium bowl. Form into balls.
Place in a meatballs in a lightly oiled skillet and brown on all sides over medium heat. Remove meatballs from pan and keep warm.
Add wine and chives to skillet, scraping to loosen any browned bits. Cook for about 2 minutes, then add cream, parmesan and water; reduce heat and simmer for about 3 minutes, stirring frequently. Add pasta, toss to coat noodles and cook for another minute.
Place pasta in warmed pasta bowls and top with meatballs.
