Gf cooking spray (we used Spectrum’s Canola Spray Oil, www.spectrumorganics.com) 1 lb lean ground beef 1 cup thinly sliced onions 2 Tablespoons minced ginger 2 garlic cloves, minced 2 cups bok choy, thinly sliced 1 red pepper, cored, seeded and thinly sliced 2 cups mushrooms, thinly sliced 2 Tablespoons gf soy sauce 8 leaves bibb or iceburg lettuce
Coat a large skillet with cooking spray. Heat skillet at medium-high heat. Add beef, onion, ginger and garlic. Cook and toss until beef is browned and onion is soft. Add bok choy, red pepper, mushrooms and soy sauce and cook for about 5 minutes or until vegetables are crisp tender. Spoon about ˝ cup of mixture into each lettuce cup and serve immediately.
