Lemon & Rice Pudding

Ingredients

3/4 cup aborio rice
5 cups milk
1-1/2 Tablespoons lemon zest
3 Tablespoons butter
3 egg yolks
1/2 cup sugar
3 Tablespoons lemon juice
1/4 teaspoon cinnamon
Directions
Bring 3 cups of water to boil in a large saucepan and gradually add rice. Cook for 2 minutes, stirring. Remove from heat and drain.

In a heavy saucepan, combine 2-1/2 cups milk, lemon zest and butter. Bring to a boil and add rice. Cook and stir over lowest heat, stirring frequently. When rice absorbs all the milk, about 30 minutes, add remaining milk and continue cooking until liquid reduces again and mixture resembles a thick creamy sauce.

Beat egg yolks with sugar until light and lemon colored. Add lemon juice. Fold egg mixture into rice and set over low heat, stirring constantly for 5 minutes.

Spoon rice into serving dishes and allow to cool. Sprinkle with cinnamon and serve.
