1 chicken, cut into 8 pieces, washed and dried Salt and pepper Gf flour for dredging 2 Egg whites 1/2 teaspoon cinnamon 1/4 cup vegetable oil
Preheat oven to 350 degrees F. Sprinkle chicken with salt and pepper. Beat egg whites and place in shallow bowl. Mix flour and cinnamon together and place in a separate shallow dish. Dip chicken pieces in egg whites and then into the flour mixture. Place chicken on a baking sheet or jellyroll pan and place in oven. Bake for 20 minutes. Heat a large heavy skillet over medium-high heat and add oil. When hot, add chicken pieces and fry until golden on all sides, about 20 minutes. Serve.
