Ingredients
4 gf flour tortillas* 1 Tablespoon vegetable oil 1/2 small onion, chopped 3 garlic cloves, minced 1 can black beans 1/2 cup gf chicken stock Salt and freshly ground black pepper to taste 2 cups cheddar cheese, grated 1/4 cup gf sour cream 1/2 cup gf salsa
Directions
Heat the oil in a medium skillet over medium-high heat. Add the onions and sauté until tender. Add the garlic and sauté for 1 minute. With a slotted spoon, add 1 cup of black beans. Mash the beans with a potato masher into the onion-garlic mixture. Continue to add the remaining beans in this manner until they are all incorporated. Stir in gf chicken broth; cook, stirring frequently, over low heat until the beans are slightly soupier than you want - they will thicken as they sit. Adjust seasonings to taste with salt and freshly ground black pepper.
Heat a large dry skillet over medium high heat. Add a tortilla and cook until softened and warmed through, about 1 minute per side. Slide onto a plate and proceed with filling burrito.
Spread sour cream thinly over tortilla. Place the refried beans in the center and top with cheddar cheese and salsa. Fold over edges of tortilla to form the burrito. Serve immediately.
Tips
*We used Don Poncho’s gf flour tortillas in this recipe. You can purchase these tortillas at www.glutenfreemall.com. Note: Do not freeze this product or it will make them extremely hard to work with. They will keep in the refrigerator for a long time.
