2-1/3 cup gf flour 5 Tablespoons sugar 1-1/2 Tablespoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt Dash of freshly ground nutmeg 1/4 teaspoon cinnamon 4 eggs 2 cups applesauce 1 cup milk 1 cup buttermilk 1/4 cup vegetable oil Maple syrup
Directions
In a bowl, combine the gf flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
In a separate bowl, whisk together the eggs, applesauce, milk, buttermilk and vegetable oil. Add wet ingredients to the dry ingredients. Mix until just combined.
Turn the waffle iron on and lightly oil both sides of the iron. When the waffle iron is hot and ready, pour the batter on the iron and cook until the waffle is nicely browned. Remove the waffle and serve with warmed maple syrup.
Tips
We used The Gluten Free Pantry's Country French Bread flour mix for the gf flour in this recipe (www.glutenfree.com).
