8 corn tortillas 1/2 Tablespoon unsalted butter or 1/2 Tablespoon canola oil 1/2 cup monterey jack cheese, grated 1/2 cup medium or sharp cheddar cheese, grated 1/4 cup parmesan cheese, grated 3 Tablespoons fresh cilantro, chopped (optional)
In a medium bowl, combine the 3 cheeses.
Evenly sprinkle cheese on top of 4 tortillas. Sprinkle each tortilla with fresh cilantro and top with remaining 4 tortillas.
In a skillet melt butter or oil over medium heat. Working with 1 quesadilla at a time, fry tortilla "sandwich" for 2 minutes per side or until tortilla is lightly browned in spots on both sides and cheese is melted. Cut quesadilla in quarters and serve.
