Spaghetti w/Meatballs

Ingredients

1 garlic clove, minced
1 egg, lightly beaten
1 pound ground beef
1/2 cup cooked white rice
2 Tablespoons Italian parsley, chopped
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Olive oil
3 cups gf basic tomato sauce
8 ounces gf spaghetti
1/4 cup parmesan cheese, grated (optional)
Directions
In a large bowl, combine garlic, egg, ground beef, cooked rice, parsley, basil, salt and freshly ground black pepper. Mix well. Form into 1-1/2 inch balls.

In a large, deep skillet heat about 2 teaspoons olive oil over medium-high heat. Add meatballs (be careful not to overcrowd...if there are too many for your pan, brown them in batches), and brown on all sides, about 5 minutes. Drain off any excess fat. Add tomato sauce to meatballs, reduce heat and simmer 15 minutes. Adjust seasonings to taste with salt and freshly ground black pepper.

Meanwhile, prepare gf pasta according to package directions. Drain. Toss pasta with about 1 cup of hot tomato sauce.

To serve, place pasta on dinner plates and top with a few meatballs and about 1/2 cup of tomato sauce. Garnish with freshly grated parmesan cheese if desired.
Tips
We used Tinkyada’s spaghetti for the gf pasta in this recipe with great results.
