Pizza Burgers on Grilled Polenta

Ingredients

1 pound ground beef
1/4 pound gf Italian sausage
1/4 cup gf pizza sauce
1 garlic clove, minced
1 teaspoon dried oregano
1 teaspoon dred basil
Salt and fresh ground pepper

For grilled polenta:
Packaged sun-dried tomato and basil polenta in the tube
Olive oil

For topping:
1 Tablespoon olive oil
1 green pepper, sliced
1 cup mushrooms, sliced
1/2 sweet onion, sliced
4 slices mozzarella cheese
4 Tablespoons gf pizza sauce
Sliced black olives
Hormel’s pepperoni slices
Red pepper flakes



Directions
In a large bowl, combine ground beef, sausage 1/4 cup pizza sauce, garlic, oregano and basil; mix until well blended. Form mixture into patties and sprinkle with salt and pepper. Cook patties on a grill or pan-fry. Cut polenta into 1/4" slices and brush both sides with olive oil. Place on grill or pan-fry until browned. Meanwhile, heat a non-stick skillet over medium-high heat and add 1 Tablespoon olive oil. When hot, add green pepper, mushrooms and onion slices. Saute, stirring constantly until vegetables are just tender; sprinkle with salt and pepper. While burgers are still on the grill, or in the pan, spread a generous layer of pizza sauce on top of each burger and cover with pepperoni slices. Top each burger with a slice of mozzarella cheese. When cheese is softened and melting, remove polenta slices to individual plates and top with burgers. Place a heaping mound of sauteed vegetables on top of each burger and sprinkle with black olives. Sprinkle with red pepper flakes and serve immediately.
Tips
To make this a quick lunch, purchase Hormel’s Pepperoni slices (they are gluten-free) and Food Merchant’s cooked polenta, by the Quinoa Corporation, www.quinoa.net.
