Serves 4 Difficulty
3/4 cup sugar 1/8 cup gf flour 1 Tablespoons corn starch Salt 2-1/2 cups milk 4 egg yolks 1 Tablespoons unsalted butter 3/4 Tablespoons vanilla 4 ripe bananas, cut into 1/4" slices
Into a medium-heavy saucepan, sift together sugar, flour, corn starch and a pinch of salt; set aside.
In a medium saucepan, scald milk, then slowly pour milk into saucepan containing sugar mixture; whisking constantly. Whisk until smooth.
Place pan over medium heat and cook, whisking constantly, until thickened; about 10 minutes.
Remove from heat and add egg yolks, one at a time, whisking constantly. Return pan to low heat and cook, whisking constantly until mixture is very thick (the consistency of pudding) and cook for 2 or 3 minutes more. Remove from heat and stir in butter, vanilla and bananas.
Scoop pudding into serving bowls or cups and let cool. Refrigerate.
