Ingredients
2 cups gf flour
2/3 cup sugar
1 Tablespoon baking powder
1-1/2 teaspoons salt
1/2 teaspoon ground cinnamon
1 cup milk
3/4 cup gf creamy peanut butter
2 eggs
1/4 cup vegetable oil
Directions
Preheat oven to 350 degrees F. Butter a 9x5x3 baking pan.
Add all dry ingredients to a food processor and pulse until blended. Add all remaining ingredients and process until blended and smooth.
Pour batter into prepared baking pan and bake for 50 minutes or until an inserted toothpick comes out clean. Cool before slicing.
Tips
This is great with jelly or jam! We used the Gluten Free Pantry’s Country French Bread Mix as a straight substitution for flour.
