Ingredients
2 sticks (1 cup) unsalted butter, softened 1/2 cup sugar 2-1/4 cups gf flour 1/4 teaspoon baking soda 1/2 teaspoon kosher salt 1 egg 1/4 teaspoon vanilla extract Food coloring for color (optional) Gf candy for decorating (optional)
Directions
Preheat oven to 400°F.
In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy, about 4-5 minutes. Beat in egg and vanilla until incorporated.
In a separate bowl, whisk gf flour, baking soda, and salt.
Add dry ingredients to wet ingredients, stirring with a wooden spoon until combined. (If you prefer you can color the cookie dough by adding a few drops of food coloring and mixing until color is evenly distributed. We divided our dough into 3 bowls and made 3 different colors).
Spoon dough into a cookie press. Form desired shapes on an ungreased cookie sheet. Decorate with chocolate chips, gf candies, sprinkles, nuts, or dried fruit, if desired.
Bake for 5-8 minutes or until set but not browned. Immediately remove from cookie sheet and cool on racks.
