2 baking potatoes 1 teaspoon unsalted butter 1 garlic clove, minced 1/4 cup milk 1/4 cup cheddar cheese, grated 1/2 cup gf ham, chopped 2 teaspoons chives, chopped Salt and freshly ground black pepper
Directions
Preheat oven to 425°F.
Pierce potatoes with a fork and place in oven. Bake potatoes until tender when pierced with a fork. Remove from oven and let stand for 2 minutes.
Cut potatoes down center, lengthwise. Scoop out pulp, leaving a 1/4" thick shell. Reserve shells; set pulp aside.
Increase oven temperature to 500°F.
Heat butter in a skillet over medium-high heat; sautéing for 30 seconds. Add milk and bring to a simmer. Pour mixture over potato pulp. Add 2 tablespoons cheddar cheese, ham and chives.
Mash potatoes with a potato masher or a fork. Adjust seasonings to taste with salt and freshly ground black pepper.
Stuff shells with potato mixture. Sprinkle evenly with remaining 2 tablespoons cheddar. Bake for 8 minutes or until cheese begins to brown.
