Stir Fried Chicken with Sweet Ketchup Sauce

Ingredients

2 boneless, skinless chicken breasts, sliced
2 teaspoons sugar
2 teaspoons orange juice
1 onion, sliced
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
2 scallions, chopped
2 Tablespoons vegetable oil
1/4 cup gf Chicken Stock
1/4 cup gf ketchup
Salt and freshly ground black pepper
Directions
In a small bowl, combine the chicken with 1 teaspoon sugar and orange juice. Cover and set aside.

Heat a wok over high heat. Add 1 tablespoon of vegetable oil. When oil is hot, add the onions; sauté for 2-3 minutes. Add the peppers; sauté for 2-3 minutes. Add 3 tablespoons chicken stock, cover and cook for about 3-4 minutes. Add 3 tablespoons of ketchup and the remaining sugar, stirring to coat the vegetables. Cook for 2 minutes more. Adjust seasonings to taste with salt and freshly ground black pepper. Transfer the vegetables to a platter.

Add the remaining tablespoon of vegetable oil to the wok. Add the scallions and stir fry for 1 minute. Add the chicken; stir fry for 3-5 minutes or until cooked through and lightly browned. Add the remaining tablespoon of ketchup and remaining tablespoon of chicken stock. Cook for 2 minutes. Adjust seasonings to taste with salt and freshly ground black pepper.

To serve, divide the peppers and onions among 4 dinner plates. Top with chicken.
Tips
This was great served over steamed rice.
