Brats with Braised Peppers & Onions

Ingredients

1 Tablespoon olive oil
2 cups red bell peppers, sliced
1 cup yellow bell pepper, sliced
1 cup orange bell pepper, sliced
1-1/4 cup sliced onion
2 garlic cloves, minced
1 cup gf Chicken Stock
1 Tablespoon tomato paste
1-1/2 teaspoons fresh basil, chopped
1-1/2 teaspoons red wine vinegar
Salt and freshly ground black pepper
4 Johnsonville brats

Directions
Make the braised peppers:
Heat the olive oil over medium heat. Add the bell peppers, onion and garlic; sauté for 15 minutes, stirring occasionally. Stir in the chicken stock and tomato paste. Bring mixture to a boil. Reduce heat and simmer for 30 minutes or until vegetables are soft. Stir in the basil, and red wine vinegar. Adjust seasonings to taste with salt and freshly ground black pepper.

Prepare the grill. Grill brats slowly for at least 20 minutes, turning frequently.

Spoon the braised peppers and onions over the brats and serve.
