Apple-Maple Pork Stew

Ingredients

2 Tablespoons olive oil, divided
3/4 pound boned pork loin roast, cut into 1-inch cubes
1 cup diced onion
1 cup mushrooms, quartered
1 cup carrots, diagonally sliced into 1/8-inch pieces
1/2 cup red bell pepper, diced
2 teaspoons maple syrup
1/2 teaspoon dried rubbed sage
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups gf chicken broth
1/2 cup apple cider
1 Tablespoon cornstarch
2 teaspoons red wine vinegar
1/2 teaspoon gf stone ground mustard
4 cups hot cooked rice
Directions
Heat 1 tablespoon oil in a large heavy saucepan over medium heat. Add pork; sauté 5 minutes or until browned on all sides. Remove from the pan and set aside. Add remaining 1 tablespoon oil and heat until hot. Add onion and mushrooms to the pan; sauté 4 minutes. Return the pork to the pan and add carrots, red peppers, maple syrup, sage, salt, pepper, gf chicken stock and apple cider. Bring to a boil; reduce heat and simmer for 1 hour or until pork is tender.

Combine cornstarch, vinegar, and mustard in a small bowl. Add to pork mixture; bring to a boil. Cook 3 minutes, stirring frequently. Serve with rice.

I have not yet tried this recipe, but as we don’t like mushrooms I think that I will use diced apples instead. It should increase the apple flavor that Maureen thought was missing.

I found this dish very easy to make, which is a big plus in my book. It’s also tasty but I was a bit disappointed because I was expecting more apple-maple taste. By far, the chicken broth is the predominant taste with just a hint of the apple-maple lingering in the background. Since this recipe is so easy to make, I’m not quite ready to remove this one from my recipe box. Instead, I think I might tinker with it - reducing the amount of chicken broth and increasing the amount of apple cider and maple syrup and see if the dish tastes more like I was hoping it would. The results of that tinkering will determine how long this recipe has a place in my recipe box.
