Makes 4 servings. Difficulty
1 teaspoon olive oil 1 medium onion, chopped 2 garlic cloves, minced One 28 ounce can diced tomatoes 1/2 teaspoon sugar 1/8 teaspoon basil 1/8 teaspoon thyme 1/8 teaspoon rosemary Dash of cinnamon 1 pound gf fettuccine 1 cup cottage cheese 3 Tablespoons parmesan cheese, divided Salt and freshly ground black pepper
In a medium saucepan heat oil over medium heat. Add onion and cook; stirring for about 5 minutes. Add garlic and cook 1 minute. Add tomatoes, sugar, basil, thyme, rosemary and cinnamon. Simmer 20 minutes, stirring occasionally.
Meanwhile cook pasta according to package directions. Drain and rinse.
In a food processor add cottage cheese and process until creamy, scraping down sides of work bowl as necessary.
Transfer to a large bowl and micro-wave until heated through. Add pasta and half the parmesan cheese. Adjust seasonings with salt and freshly ground black pepper.
Serve pasta topped with tomato sauce and remaining parmesan cheese.
