Pasta Alla Bolognese

Ingredients

2 carrots, peeled, cut lengthwise in strips and diced
1 yellow onion, minced
2 garlic cloves, minced
3 celery stalks, diced
1/2 pound gf prosciutto, cut into small squares
1-3/4 pound tomatoes, blanched, peeled, seeded and diced
One 28 ounce can tomatoes, drained and chopped
10 ounces ground round
7 ounces ground pork
1/4 cup olive oil
1/4 cup fresh parsley, chopped
6 Tablespoons butter
6 Tablespoons gf tomato paste
1 cup gf beef stock
1 teaspoon salt
Freshly ground pepper
1 teaspoon sugar
Directions
In a large saucepan heat oil over medium-high heat. Saute carrot, onions and garlic until golden brown. Stir in celery and parsley and cook until vegetables are soft. Add ground meat; browning and breaking up so that it is crumbly. Add prosciutto and cook 5 minutes, stirring constantly. Add 3 tablespoons butter and fresh tomatoes. Add canned tomatoes, stirring thoroughly. Simmer briefly, uncovered. Stir in tomato paste. Add beef stock and stir thoroughly. Season with salt and pepper and simmer 1 hour with lid slightly ajar. Add sugar and simmer 30 minutes longer. Add remaining butter, adjust seasonings and serve over gf pasta.
Tips
Although this sauce is ready to eat after
1-1/2 hours cooking, it can be simmered all day. The longer cooking time will improve flavor.
