Fish Nuggets

Ingredients

Vegetable oil for frying
1-1/2 pounds halibut, or any lean white fish, cut into 1" cubes
Salt
3/4 cup warm water
1/2 cup gf flour
1 teaspoon dry active yeast
Directions
For batter:
Slowly stir water into flour in a mixing bowl to obtain a smooth paste. Stir in yeast, cover with plastic wrap. Allow to rise 1 hour in a warm place.

For fish:
Heat oil to 370 degrees and oven to 200 degrees. Dip the fish into the batter and then carefully into the hot oil. Use tongs or a long fork to lower the fish into the oil. Deep fry until golden brown, then turn and fry other side. Transfer the fish to a plate lined with paper towels and sprinkle with salt. Keep warm in oven until all nuggets are cooked.
Tips
The batter for these nuggets is made with yeast and needs to rise. Make the batter ahead and let rise for 1 hour.

These nuggets are crisp and crunchy. Children love them with gf ketsup!
