Ingredients

4 Tablespoons olive oil
1 pound pork, cut into 1/2 inch dice
4 Tablespoons gf flour
2 cups gf beef broth
2 garlic cloves, minced
1 cup onion, chopped
2 cups red bell pepper, diced
2 cups mushrooms, diced
1/3 cup orange juice
2 cups sweet potatoes, peeled and diced
2 cups new potatoes, peeled and diced
1 teaspoon orange zest
Salt and freshly ground black pepper

Directions
Heat 2 tablespoons of olive oil over medium-high heat in a Dutch oven. Sprinkle flour over diced pork and season with salt and pepper. Add pork to Dutch oven and brown . Reduce heat to medium. Add remaining olive oil. Add garlic, onion, red pepper and sauté for about 5 minutes. Add broth and orange juice and bring to a boil. Reduce heat to a simmer; cover and let simmer for 1 hour.

Add sweet potatoes, new potatoes, mushrooms and orange zest. Simmer, uncovered, for about 20 minutes or until potatoes and pork are tender. Adjust seasonings to taste with salt and freshly ground black pepper.
