Salmon w/Tequila Sauce

Ingredients

3/4 pound salmon filet
Salt and freshly ground black pepper
1 medium tomato, chopped
3 green onions, chopped
2 Tablespoons lime juice
1/2 jalapeño pepper, minced
1 Tablespoon tequila
1 Tablespoon olive oil
1 Tablespoon fresh cilantro, chopped
Directions
In a medium bowl combine tomatoes, onions, lime juice, jalapeño pepper, and tequila. Season to taste with salt and freshly ground black pepper.

Preheat oven to 400°F.

Lightly oil bottom of a baking dish with olive oil. Place salmon filet skin-side down in baking dish. Season with salt and freshly ground black pepper. Drizzle salmon with olive oil. Top with tomato mixture.

Bake salmon for 15-20 minutes or until it flakes easily with a fork.

Serve garnished with fresh cilantro.
