For marinade: 1/2 cup gf soy sauce 4 garlic cloves, crushed 2 teaspoon ginger, chopped 2 teaspoons lime juice 2 teaspoons honey 1/4 teaspoon red pepper flakes 1/4 teaspoon sesame oil
2 pounds beef tenderloin or top sirloin, cut into 1" cubes 12 mushrooms 2 zucchini, cut into 12" slices 1 red bell pepper, seeded and cut into 1" squares 2 sweet onions cut into 1/2" wedges
Mix all marinade ingredients together and add all other ingredients. Let marinate for 30 minutes.
Ready a grill or set oven to broil.
Skewer meat and vegetables alternately until skewers are full. Grill or broil, turning frequently, until meat is done but vegetables are not burned. This should take about 10 minutes. Serve 3 skewers per serving with steamed white rice.
