For dressing: 2 Tablespoons lemon zest 3 Tablespoons gf soy sauce 3 Tablespoons Asian fish sauce 3 Tablespoons rice vinegar 1 Tablespoon jalapeno, minced 2 Tablespoons ginger, chopped 1 garlic clove, minced 1/3 cup sugar
For salad: 1 grapefruit, peeled and fruit cut from between white membranes 4 cups cooked chicken breast, chopped or shredded 3 Tablespoons lime, chopped (including peel) 4 handfuls of gourmet greens, washed and rinsed
Directions
For dressing: Add all dressing ingredients together in a small bowl and mix to blend. In a small skillet, add sugar over high heat. Stir constantly until sugar is melted. Add lemon mixture (mixture will bubble and sugar will harden) and stir until sugar is dissolved. Let cool. Combine salad ingredients with cooled dressing and toss to coat. Serve immediately.
