Ingredients
2 Tablespoons olive oil 2 Tablespoons lemon juice 8 garlic cloves, minced 2 Tablespoons parsley, minced 1 teaspoon ginger, minced 1-1/2 teaspoons ground cumin 1 teaspoon coriander seeds, crushed 1/4 teaspoon turmeric 1/2 teaspoon sweet paprika 1/4 teaspoon red pepper flakes 1/4 teaspoon fresh ground pepper 1-1/2 teaspoons oregano, minced A few saffron threads 1 teaspoon salt 1 pound pork loin or lean pork, cut into 1/2" cubes
Directions
In a sealable plastic bag, combine all ingredients, except pork, mix until well blended. Add pork and mix until all pork pieces are coated. Refrigerate for 24 hours, turning occasionally.
To cook, heat a large skillet over medium-high heat and add 2 tablespoons olive oil. When oil is hot, add pork and saute until pork is browned on all sides and cooked through. Serve immediately.
Tips
For best results, pork should marinate in the refrigerator for 24 hours.
