2 Tablespoons vegetable oil 1 Tablespoon crushed peppercorns 1 jalapeno pepper 1/8 teaspoon cayenne pepper 1 pound beef tenderloin or top sirloin, cut into 1" cubes Salt to taste 2 red bell peppers, seeded and cut into 1" pieces 1 onion, cut into wedges
Directions
Place jalapeno pepper on a baking sheet under broiler until blackened on all sides. Remove from oven and place in a small bowl; cover with plastic wrap. Let sit for 15 minutes. Remove skin and seeds; mince.
Add oil, peppercorns, jalapeno pepper and cayenne to a sealable plastic bag and mix well. Add beef cubes and mix until all is coated. Marinate for 2 hours.
If using wooden skewers, soak them in water for at least 30 minutes.
Thread beef, onions and red peppers alternately onto skewers. Heat a grill and cook until done. Serve with white rice.
