Makes 2-3 servings. Difficulty
6 ounces gf fettuccine or spaghetti 2 ripe tomatoes, cut in half Olive oil 1 large garlic clove, minced and mashed with 1/8 teaspoon salt 1/4 cup parmigiano-reggiano cheese, grated plus 3-4 Tablespoons shaved with a vegetable peeler 1/4 cup fresh basil, sliced
Prepare pasta according to package directions. Drain.
Line a baking sheet with aluminum foil. Place tomatoes on baking sheet and drizzle with olive oil. Broil until tomatoes start to caramelize on top. Remove from broiler and let cool slightly.
Place pasta in a large bowl. Add broiled tomatoes, garlic, grated parmesan and basil to bowl. Drizzle with 2 teaspoons olive oil and toss until combined. Adjust seasonings to taste with salt and freshly ground black pepper. Garnish with shavings of parmigiano-reggiano cheese.
