2 chicken breasts, skinless and boneless 1/3 cup chopped cilantro 1/2" piece of ginger, cut into small pieces Zest of 1/2 lemon 1 garlic clove Juice from 1/2 lemon 2 teaspoons red wine vinegar 1 teaspoon olive oil
Heat broiler. Arrange chicken breasts on broiler pan. Add cilantro to a food processor and while running add ginger pieces. Add lemon zest. garlic, lemon juice, vinegar and oil and process until blended. Spoon half the ginger mixture over chicken breasts and broil close to the heat for 2 minutes. Turn the breasts over and spoon the remaining ginger mixture on top and broil for 6 minutes more or until done. Serve immediately.
