4 chicken quarters Juice and grated rind of two lemons 4 Tablespoons olive oil 2 garlic cloves, crushed 2 sprigs of fresh thyme Kosher salt and fresh ground pepper
Sprinkle the chicken with salt and pepper and place in a baking dish. In a small bowl, mix together lemon juice, garlic, thyme. Pour marinade over chicken and marinate over night. Prepare a grill or broiler and cook chicken for about 30-45 minutes, turning every 15 minutes. Serve garnished with lemon rind.
