Linguini w/Fresh Tomatoes & Basil

Ingredients
4 ripe tomatoes, cut into 1/4" pieces
1 pound soft mozzarella, cut into 1/4" pieces
1 cup fresh basil leaves, cut into strips
3 garlic cloves, minced
1 cup olive oil
2-1/2 teaspoons salt
1/2 teaspoon pepper
1-1/2 pounds gf linguine
Fresh grated Parmesan cheese
Directions
In a large bowl combine tomatoes, mozzarella, basil, garlic, olive oil, salt and pepper; cover and set aside at room temperature.
Cook pasta according to package instructions; drain.
Immediately toss pasta with tomato mixture.
Garnish individual servings with Parmesan and fresh ground pepper.
Tips
We used Tinkyada's pasta for this recipe.
This recipe is best when the tomato mixture is allowed to set for 2 hours before serving.
