Makes 4 servings. Difficulty
6 ounces gf macaroni 2 teaspoons extra virgin olive oil (of good quality) 1/2 cup cherry tomatoes, halved 2 Tablespoons fresh basil, chopped 1/4 cup Parmesan cheese, grated 1 garlic clove, minced Salt and freshly ground black pepper
Prepare gf pasta according to package directions. Drain and toss with olive oil. Set aside to cool.
Mince garlic, and adding a pinch of salt. With the back of a chef’s knife press salted garlic into the cutting board until garlic almost turns to a paste. This will remove some of the bitterness from the fresh garlic.
Toss pasta with cherry tomatoes, basil, parmesan cheese and garlic. Season to taste with salt and freshly ground black pepper. Serve.
We use Tinkyada’s gf Macaroni for the gf pasta in this recipe.
