3 Tablespoons balsamic vinegar 2 Tablespoons extra-virgin olive oil 3 lbs. mixed tomatoes (yellow, orange and red) 3 Tablespoons fresh basil, thinly sliced Salt and freshly ground black pepper
In a small bowl, whisk together the baslamic vinegar and olive oil. Wash and core the tomatoes and slice 1/3 inch thick. Arrange in layers in a serving dish. Drizzle dressing over the top. Sprinkle with fresh basil, salt and freshly ground black pepper. Cover and chill for at least 30 minutes or up to 4 hours. Bring to room temperature before serving.
