2 large sweet onions 2/3 cup gf flour 1/2 teaspoon salt 1/4 teaspoon paprika 1/4 teaspoon fresh ground pepper 1/3 cup carbonated water 1 egg white, beaten Vegetable or canola oil
Directions
Preheat oven to 400 degrees F. Cut onions into thick slices and separte the rings. Combine dry ingredients and blend. Stir in carbonated water and egg white until blended. Heat a large non-stick skillet over medium-high heat and add about 1/2" of oil. Dip onion rings into the batter, turning to coat. When oil is very hot, (350 degrees F.) add onion rings to skillet. Do not let rings touch. Cook about 2 minutes on each side until golden then place on a jelly roll pan. When all rings have been fried, place the jelly roll pan in the oven and bake for 10 minutes or until crisp. Serve immediately.
