Serves 4 Difficulty
3 cups gf penne 2 Tablespoons olive oil 1 cup fresh corn kernels 1 cup zucchini, sliced 2 cups green beans, cut into 2" pieces 2 garlic cloves, minced 1/3 cup sun-dried tomatoes, drained and chopped 1/2 teaspoon salt 1/4 teaspoon fresh ground pepper 1/2 cup Parmesan cheese, grated
Bring a large pot of water to a boil. Add penne and cook until just tender. Drain. Bring a medium pot of water to a boil then add green beans. Cook until just tender. Heat 1 Tablespoon oil in a large non-stick skillet over medium-high heat. Add zucchini and corn and saute for 2 minutes. Add green beans, sun-dried tomatoes and garlic and saute for 2 more minutes. Season to taste with salt and pepper. Add penne, 1 Tablespoon oil and Parmesan cheese and toss. If pasta mixture looks dry, add a little more oil. Seasoon to taste again and serve.
