2/3 cup parsley 2-1/2 Tablespoons capers, drained 1/4 teaspoon fresh garlic, minced 1/4 teaspoon gf mustard 1/4 teaspoon red wine vinegar 1/4 cup olive oil Salt to taste 1 cup gf re-fried beans 1 red bell pepper, cut in half 1 green bell pepper, cut in half 4 green onions 1 zucchini, cut in half lengthwise Salt and freshly ground black pepper 8 large corn tortillas, warmed
For sauce: Blend parsley, capers, garlic, mustard, vinegar, olive oil in a food processor, adjust seasoning with salt. Set aside.
Preheat the grill. Grill bell peppers, onions, and zucchini until grilled on all sides. Remove from grill and let cool long enough to handle. Chop vegetables into 1/2 inch pieces. Smear a layer of re-fried beans on each warmed tortilla and top with about 1/2 cup vegetables and sprinkle with 1-2 Tablespoons sauce. Roll and serve immediately.
This recipe is a little unusual and surprisingly delicious!
