Summer Italian Game Hens

Makes 2-4 servings.

2 game hens, rinsed and patted dry
Sea salt
Herbs de Provence
Olive oil
Freshly ground black pepper
Directions
Lightly spray both game hens with olive oil. Season each hen generously with sea salt, herbs de provence and freshly ground black pepper.
Place game hens on a rotisserie and let cook as close to the element as possible for 1-1/2 hours or until juices run clear when pierced with a fork.
Remove from rotisserie, tent with foil and allow to rest for 5-10 minutes before serving.
Depending on how big your game hens are, serve 1/2 to 1 whole game hen per person.
