Serves 4 Difficulty
1-1/4 cups water Peel of 1/2 orange 1/2 cinnamon stick Pinch of salt 1/2 cup long grain white rice 1/4 cup golden raisins 1/4 cup dark rum 1 cup Silk soy milk 1 cup Silk creamer 1/2 cup sugar 1 Tablespoon Earth Balance (butter)
In a saucepan, add water, orange peel, cinnamon stick and a pinch of salt; bring to a boil over medium-high heat. Add rice and blend. Reduce heat to low; cover and cook on lowest setting for 20 minutes.
Place rum in a small bowl with raisins and set aside.
Add soy milk, soy creamer, sugar, Earth Balance, raisins and rum to rice and cook over low heat, stirring frequently until mixture thickens, about 35 minutes. Remove orange peel and cinnamon stick.
Scoop pudding into individual bowls and serve warm.
This pudding is wonderful and almost indistinguishable from the original.
