In an electric skillet or heavy skillet heat oil over medium-high heat. When hot, add pork and brown on both sides. Reduce heat to low, cover and cook for 1-2 hours or until meat is very tender.
In a small, heavy skillet toast peanuts over medium heat. Remove from heat and chop.
Place remaining ingredients in a large bowl and blend well.
When pork is done, shred it and place it in bowl with soy sauce mixture; tossing well.
In a large skillet or wok heat peanut oil. When hot, add pork and toss until hot and fragrant. Serve immediately over white rice.
Tips
This recipe can be prepared in two steps. First step: Cook the pork. Second step: The next day or several days later, you can make this recipe. Remember to make the rice before beginning to stir-fry.
