Ingredients
1/2 cup shredded carrots 1 cup shredded apple, such as Granny Smith 2 eggs 1/2 cup vegetable oil 3/4 cup sugar 1 teaspoon vanilla 1-1/2 cups gf flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1-1/2 teaspoons cinnamon 3/4 teaspoon ground ginger 1/4 teaspoon nutmeg 1 cup chopped walnuts 1 cup golden raisins
Directions
Preheat oven to 375 degrees F. Butter a loaf pan. In a large bowl, mix together carrots, apples, eggs, oil, sugar, and vanilla. In a separate bowl combine flour, baking soda and powder, salt, cinnamon, ginger and nutmeg. Add the dry mixture to the wet mixture and stir until blended. Stir in walnuts and raisins and pour batter into loaf pan. Bake for 1 hour or until an inserted toothpick comes out clean. Let cool for 5 minutes in the pan, then turn out on to a rack to cool completely.
