Chicken Burgers with Pesto

Ingredients

1-1/2 teaspoons extra-virgin olive oil
1 small onion, finely chopped
1 large garlic clove, minced
2 Tablespoons water
1-1/2 lbs. ground chicken
Salt and freshly ground black pepper
1 Tablespoon sun-dried tomato oil (use oil from a jar of sun-dried tomatoes)
4 small handfuls of gourmet greens
2 Tablespoons prepared mayonnaise
1 Tablespoon Basic Pesto
Red onion slices
Directions
Prepare the grill.

In a small skillet, heat the olive oil over medium heat. Add the onion and garlic; cook over medium heat, stirring occasionally, until softened, about 5 minutes. Add the water and continue to cook, stirring, until the onions are lightly browned, about 5 minutes longer. Scrape the onion mixture into a medium bowl and let cool. Add the ground chicken, 1 teaspoon of salt and 1/2 teaspoon of freshly ground black pepper. Knead the chicken mixture lightly and form it into 4 patties.

Grill the burgers over a hot fire, turning once, until lightly charred on both sides and cooked through, about 5 minutes per side. Remove from the grill and transfer to a platter. Tent with foil; let rest for 5 minutes.

In a small bowl, mix the mayonnaise with the pesto. In a separate bowl, toss the mixed greens with the sun-dried tomato oil. Season the greens to taste with salt and freshly ground black pepper.

To serve, place the burger on a plate. Spread with pesto mayonnaise. Top with red onion and mixed greens.
