Garlic Chicken with Tomato Raisin Sauce

Ingredients

3 Tablespoons chopped cilantro
1 teaspoon salt
2 teapoons coarse ground pepper
8 cloves minced garlic
1 lb. skinless, boneless chicken thighs cut into 1-1/2 " pieces
1/3 cup tomato sauce
1 Tablespoon gf brown sugar
1 Tablespoon cider vinegar
1/2 cup raisins
Directions
Preheat oven to 450 degrees F.
Mix cilantro, salt, pepper and 6 cloves garlic together in a small bowl. Place chicken in a dish and toss with cilantro rub. Placed seasoned chicken pieces in a lightly oiled baking dish. Bake for 20 minutes or until done. Meanwhile, place tomato sauce, brown sugar, vinegar and raisins in a food processor and process just until raisins are chopped. Serve chicken with sauce.
