Fresh asparagus Salt 1/4 cup gf mayonnaise 1/2 cup ripe mango, diced 2 teaspoons fresh lime juice
Combine mayonnaise, mango and lime juice in a food processor and process until smooth. Wash asparagus and snap off the thick ends. In a shallow pan, add enough water to cover asparagus and bring to a boil. Sprinkle water with salt. Place asparagus in boiling water for 2-3 minutes. Drain, transfer to serving dish and top with Mango Mayo.
