Ingredients
1-1/2 cups gf flour 1 cup sugar 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 egg 1/2 cup vegetable oil 1 teaspoon vanilla 1 teaspoon lemon zest 1 Tablespoon lemon juice 1-1/2 cups fresh pears, grated, with any juice 1 cup pecans, coarsely chopped
Directions
Preheat oven to 350 degrees F.
Grease a 9"x5" loaf pan.
In a large bowl mix flour, sugar, baking soda, salt, cinnamon and nutmeg together.
In a separate large bowl, combine egg, oil, vanilla, lemon zest, lemon juice and pears.
Add flour mixture to pear mixture and fold together. Add nuts and mix just until all ingredients are moistened.
Pour batter into baking pan and bake for 1 hour and 15 minutes, or until an inserted toothpick comes out clean.
Let cool for 5 minutes in pan and then turn out onto a rack to cool completely.
