1-1/4 cup gf flour 3 teaspoons baking powder 1 tablespoon sugar 1/2 teaspoon salt 1 beaten egg 1 cup milk 2 Tablespoons vegetable oil 1/2 cup water
For sauce: 1 can pitted cherries 2 teaspoons cornstarch 1/2 cup golden raisins Butter
Directions
Sift together all dry ingredients. Combine egg, milk and vegetable oil and add to dry ingredients. Add water to thin.
Drain cherries and pour juice into a small saucepan. Stir in cornstarch and cook over low heat, stirring constantly until thickened. Add cherries to pan and heat through.
Stir raisins into pancake batter and cook pancakes on hot grill with butter. Turn pancakes when air bubbles appear and pancake looks matte.
Serve pancakes with butter and cherry sauce.
