Ingredients
3/4 cup water 2 ounces unsalted butter, cut into 4 pieces 1/2 teaspoon salt Pinch of cayenne Pinch of nutmeg 3/4 cup gf flour 3 eggs 1/2 cup pecans, chopped and toasted 3/4 cup sharp cheddar cheese, grated 1/4 cup parmesan cheese, grated
Directions
Preheat oven to 425 degrees F.
Line a baking sheet with parchment.
In a medium saucepan, combine water, butter, salt, cayenne and nutmeg over medium-high heat. Bring to a boil, and adding flour all at once, stir vigorously with a wooden spoon.
Remove pan from heat. Stir until mixture forms a ball and comes away from sides of pan. Add eggs, one at a time, stirring vigorously between each addition. Mixture should come away from pan before adding next egg. Add cheese and pecans and stir until combined.
Drop two tablespoons of dough onto baking sheet, spacing gougeres about 1" apart. Bake for 30 minutes. Gougeres should be golden on outside and just moist on inside.
Serve immediately.
