Makes 60 biscotti. Difficulty
1 cup sugar 1 cup vegetable oil 1 cup orange juice 1/2 cup sweet brandy 1/2 cup Ouzo (or Sambucca) 1 Tablespoon baking soda 1 Tablespoon baking powder 6 cups gf flour 2 teaspoons anise seed
Preheat the oven to 350°F.
In a mixing bowl combine all the ingredients except the gf flour. Mix well. Continue mixing as you add the gf flour. Keep adding the gf flour until the dough is firm. Spread the dough evenly into a 10x15 inch pan. Bake for 40 minutes.
With a serrated knife, make 11 lengthwise cuts and 5 cross cuts (yielding 60 biscotti - 3x3/4" in size).
Remove half the biscotti from the pan and set aside. Lay the rest on their side and bake for 10 minutes. Turn them over and bake the other side for 10 minutes. Let cool on a cooling rack. Repeat process with remaining biscotti.
Serve these delicious cookies with coffee or milk!
