Ingredients
1 cup gf flour 1/4 cup sugar 2 teaspoons baking powder 1/4 teaspoon salt 3 Tablespoons cold unsalted butter, cut into slices 1/2 cup creme fraiche 1 large egg, lightly beaten 1 cup cheddar cheese, grated
Directions
Position an oven rack in lower third of the oven and preheat oven to 400 degrees F.
Line a baking sheet with parchment or a silpat.
In a large bowl, mix together, flour, sugar, baking powder, and salt. Cut in butter using a pastry blender or two knives until mixture is the size of small peas.
In a small bowl, combine creme fraiche and egg and mix until blended. Add egg mixture to flour mixture, stirring just until blended. Add cheese and gently incorporate.
Spoon large tablespoon size mounds of batter onto baking sheet. Bake for about 22 minutes or until an inserted toothpick comes out clean.
Tips

For creme fraiche: Combine 2 cups cream with 2 tablespoons buttermilk and blend. Cover and let sit out on the counter for 24 to 48 hours. Refrigerate.
You can substitute cream for the creme fraiche if you prefer.
