2 cups masa harina 1 teapsoon salt 2 cups water 2 cups mascarpone
Directions
Preheat oven to 350 degrees F. Lightly grease a baking sheet.
In a large bowl, mix masa, salt and water together. Dough should be stiff but moist. If it is not stiff add more masa. Cover bowl with plastic wrap and let sit for 5 mintues.
Form dough into 10 balls and then flatten balls into 3" rounds, about 1/2" thick. Heat a large-heavy skillet over medium heat and lightly oil with vegetable oil. Place cakes in skillet and cook for 5 minutes on each side.
Transfer cakes to baking sheet and bake for 30 minutes, turning twice during baking.
Remove from oven and split cakes open and remove any wet dough from centers. Fill pockets with mascarpone. Serve immediately.
Tips
Masa harina can be found in the Hispanic or ethnic section of a grocery store. Masa harina is corn flour.
